Mooting makes you creative. You are given a box of ambiguous facts and uncertain law, and asked to craft a convincing argument. Do States have a customary international law obligation to disarm their nuclear weapons? Probably not. But if your client State needs there to be such an obligation, a legally correct and factually plausible argument has to be found. Mooting teaches you to think beyond the box you are given and come up with something novel and interesting.
